A new restaurant is set to open within a beautiful Ascot parkland hotel this summer.

Celebrity chef, Adam Smith will unveil his restaurant Woven on September 8 offering diners an unbelievable culinary experience.

Set in the heart of Coworth Park in Ascot, the restaurant will be part of the established hotel which lies in the wake of Berkshire’s idyllic countryside.

Speaking on the restaurant launch, Adam Smith comments: “A memorable dining experience is created by so much more than the dishes that we eat.

“With Woven, we will be pushing the boundaries of creativity and excellence in food, but also in drinks, service and design to create a restaurant that delights both destination diners and hotel guests alike.”

Woven, is integrated into Dorchester’s Collections luxury hotel and spa, it’s concept and design inspired by the beauty of the 240 acres of parkland surrounding it. The way the different aspects of the restaurants are ‘woven’ together gave him the inspiration for his restaurant name and concept.

He added: “Stories and knowledge from my entire career, alongside inspiration from the idyllic landscape, will be woven into the menus, and the dishes, whilst refined, will be presented in playful and contemporary ways. Woven has been many years in the making, and we cannot wait to welcome our first guests.”

Smith has created a variety of dishes especially for his new restaurant within Coworth Park. He says that his dishes are inspired by classic flavours and techniques presented in fresh, creative and contemporary ways.

Fresh seafood, outstanding local butchery, foraged mushrooms, and handpicked herbs will be showcased in his seasonally changing menus.

Woven will be an excellent addition to Coworth Park hotel which opened in September 2010. The interiors are led by Martin Hulbert who designed the original hotel with sweeping views over the surrounding grounds and parkland.

The restaurant will seat 44 guests in the main dining room plus an additional 14 seats in the conservatory. Every detail has been designed by Hulbert with inspiration from the natural world. This includes the fabrics, lighting, artworks and natural materials.

Moments and striking colours and textures all come together to create a lively, luxurious, and infinitely interesting space. The design will be theatrical and contemporary yet woven seamlessly into the fabric of its Georgian manor house setting and the surrounding Berkshire countryside.

Adam Smith is considered one of the UK’s most talented chefs with an ethos of ‘taste is king’. He has been integral to Coworth Park since 2016 where he has worked as their Executive chef.

The restaurant at the acclaimed hotel gained its first Michelin star in 2018, which it has since retained with Adam Smith at the helm.

As well as Woven by Adam Smith, the hotel also offers more relaxed dining in The Barn and award-winning afternoon tea in the Drawing Room.
